Welcome to Hatchman’s Premium Cheeses



Hatchman’s Premium Cheeses Incorporated is a local artisanal cheese manufacturing company serving both the on-premise sectors through restaurants and hospitality distributors and the off-premise or retail market through supermarkets, gourmet shops and farmer’s markets.  Grounded in family tradition with the craft being passed down across three generations and a rich history across all modalities of the agricultural industry, we are driven by a desire to transform the dairy industry in particular in Barbados from a mono crop existence to a diversified sector providing high quality value added products.  In doing we can support dairy farmers who have been under siege from falling fresh milk consumption and pervasive price reductions, as well as offering sustainable high quality employment to our youth.

A soft cheese made from cow’s milk. The brie has a smooth, creamy texture and because we use a proprietary stabilized paste process, it will not get runny. Available as a wheel about 4 inches in size.



A premium Bajan take on the most famous of the goat cheeses produced in France’s Loire Valley. This a soft cheese covered with white fuzzy mold (mold is not a bad thing in cheese making!) and delivers a strong flavour.


Drunken Cheddar

This hard cheese has a mild flavour with a kick! With the look of a regular yellow cheddar cheese, the name Drunken Cheddar comes about because of our unique, distinctive process using beer at the soaking stage.

Rosemary Goat Cheddar

This goat’s milk hard cheese gets its name from the infusion of the fragrant, evergreen herb added to the recipe. This fabulous cheese is our best seller.

Goat Cheese

This is a traditional soft cheese given a Bajan touch with our different varieties. We produce our goat’s cheese in 6 oz logs of plain, sorrel and herbed varieties. The plain variety has a very neutral and is perfect for swapping out for cream cheese in your favourite recipes.

Kofi Blue

Derived from cow’s milk (and named after my son!), Kofi’s Blue is a hard cheese similar to cheddar in its texture, but created with the true blue cheese lover in mind. Very approachable in flavour.

Gun Bolt

Our very own recipe, based on the famous Saint-Marcellin soft French cheese made from cow’s milk. This very creamy blend is available in a 2-inch wheel.





Many of us don’t realise that mold is an integral part of cheese manufacturing. So have no fear if you see mold on your premium Hatchman’s Cheese after you’ve had it in your refrigerator. Our cheeses actually store very well under refrigeration.


The United States Department of Agriculture and the Mayo Clinic recommend the following guidelines for mold and cheese: 
Our Hatchman’s hard cheeses such as our Drunken Cheddar are safe to eat if the mold is removed. Cut off at least one inch around and below the mold spot. Keep the knife out of the mold itself so that it doesn’t cross-contaminate other parts of the cheese. Cover the cheese in fresh wrap.


For Gun Bolt, Crottin and other soft cheeses, when you begin to see mold, it is best to discard the cheese. Remember that on cheese like Hatchman’s premium Kofi Blue, the mold you see when you purchase the product is part of the manufacturing process.
